Remove from heat and stir in the cooked sago and pomelo pulp. Pour into a flat tray (to 1cm thickness) and refrigerate for 30 minutes until set. Once firm, cut into 1.5cm cubes.

  2. Sifting and Mixing: Sift wheat starch and tapioca starch into a heat-proof bowl. Ensure the water is at a rolling boil (100°C); lukewarm water will ruin the starch gelatinization. Pour the boiling water into the flour all at once while stirring rapidly with chopsticks.

  3. The Hydration Rest: Immediately cover the bowl with a lid or plastic wrap. Let the dough steam in its own heat for exactly 5 minutes. This 'tangmian' process is critical for the translucent 'crystal' effect.

  4. Kneading: While still warm, add the lard or oil. Knead the dough on a clean surface for 3-5 minutes until perfectly smooth and elastic. The dough should feel like soft clay. Keep it covered with a damp cloth at all times to prevent drying.

  5. Rolling and Pleating: Divide dough into 15g balls. Roll each into a 3-inch circle using a small rolling pin, making the edges thinner than the center. Place a cube of the chilled mango filling in the center. Create 10-12 fine pleats, pulling the dough toward the center to seal. The high hydration allows for elasticity, but work quickly.

  6. Steamer Setup: Line your bamboo steamer with perforated parchment paper or lightly oiled carrot slices. Arrange dumplings at least 1 inch apart.

  7. Steaming: Bring water in the wok/pot to a vigorous boil. Place the bamboo steamer on top and steam over high heat for exactly 6 minutes. The skins will turn from opaque white to translucent.

  8. Finishing: Remove the steamer from heat immediately. Let the dumplings rest for 1 minute before serving to allow the skin to set and become chewy. Serve slightly warm or chilled.

The Cantonese name is 楊枝甘露 (Yeung Ji Gam Lo), which translates to 'Willow Branch Manna', a reference to the Goddess of Mercy sprinkling holy water to bring relief.

For the dough, water must be 100°C. If it drops even 5 degrees, the starch won't gelatinize and the dough will crumble instead of stretching.

Do not over-steam; exceeding 7 minutes will cause the crystal skin to become mushy and lose its structural integrity.
